Phirni, a beloved North Indian dessert, is traditionally served in small clay bowls and garnished with nuts, rose petals, and silver paper to add a touch of luxury. Kheer, also known as payasam, has many different versions according to the food guide.

Sakkarai Pongal, a traditional South Indian sweet, is prepared in a special way. The rice is cooked outdoors over a fire with the cooking pots turned to the East to symbolize abundance. It’s customary for the dish to boil over during cooking. The list was topped by an oven-baked rice pudding from Turkey called Firin sutlac.
