This Hungarian potato stew with sausages recipe serves four and takes approximately 45 minutes to prepare. The ingredients required for this dish include two onions, a yellow pepper, a red pepper, a spoonful of tomato concentrate, 500 ml of vegetable stock, pepper (optional), salt (optional), bay leaf, 1-2 teaspoons of sweet pepper, half a bunch of parsley, 4 homemade sausages (cooked), and 4 tablespoons of sour cream.
To start making this dish, firstly peel and dice the onions. Next, wash the pepper, remove the seeds and peel the potato before chopping it into large cubes. Then heat some oil in a pan and sauté the diced onion and pepper for about one to two minutes until they become glassy. After that add the tomato concentrate and potatoes to the pan and sauté for a brief moment.
Once that’s done, add the vegetable stock along with salt, pepper, bay leaf and sweet paprika powder to the pan. Bring everything to a boil before covering the pan and allowing it to cook for about twenty-five minutes. While waiting for it to cook cut up your cooked sausages into slices and heat them briefly in the stew before seasoning them with salt or any other preferred spices.
Finally chop up some parsley leaves off its stem and add it as garnish to your delicious Hungarian potato stew with sausages before serving it hot with creamy mashed potatoes on top.
